夏も近づく八十八夜。今年は5月2日です。この頃になると、鮮やかな黄緑の新芽が芽吹き、それる摘み取る茶摘みが茶どころ掛川でも始まります。掛川のお茶で最も有名なのは「やぶきた」という品種。明治41年、在来種の一部に、おいしいお茶があることを発見した茶農家の杉山彦三郎に名付けられました。「やぶの北に生えていたから」というのが理由でした。掛川では「茶草場農法」という伝統的な農法で作られ、希少な生物の隠れ家としても機能しています。中でも「さえみどり」は新芽の香りが際立つ品種で、「天葉（あまね）」というブランドで管理されています。美味しい和食や和菓子の後に、また慌ただしい日常の中で、掛川のお茶をいただくと心が落ち着くのではないでしょうか。
